Cuando las golondrinas vuelven dejan detrás un largo viaje. Cuando vuelven me recuerdan a quién estaba esperando. A veces se van y vuelven cumpliendo ciclos con nuestros años. A veces se van y dejan…

Just Peachy

Peach cobbler is great. It’s a classic southern dessert that hits all the right notes: mid-summer peaches at the peak of their sweetness covered with a buttery, flaky “crust” and, maybe, topped with ice cream. While this is a perfectly honorable way to enjoy peaches, don’t let it spoil all the other possibilities these stone fruits have! When you start using peaches in every meal of the day, you truly start to understand how incredibly versatile they really are.

Breakfast is where peaches are easiest to use. They natural fit in to quick breads and pancakes. Folded into yogurt or oatmeal is another easy use for fully ripened fruit. If you want to branch out and try something a little different, make a peach jam to have on toast with almond butter. When gently cooked down with lemons, the fruits have enough natural pectin to thicken into a spreadable jam.

Lunch is when you get to have a little fun with peaches in savory foods. It’s easy to add them to salads, but if you grill them first, it brings a whole new depth to the dish. The natural sugars char quickly and create a smoky-sweet flavor that pairs perfectly with arugula and salty cheese. Add some chicken and sunflower seeds for a more filling salad that fits perfectly in a full barbecue menu. Another great use for peaches is to make a peach salsa. Peaches pair nicely with spicy peppers like jalapeños and can add an interesting touch to fish tacos.

Peaches for dinner is where things get interesting. Peaches go great with salty meats like pork chops, which would make for a great alternate to the classic applesauce. Pesto chicken brings layers of complexity with a combination of herbs, nuts, and cheese. All these flavors combined with peaches makes for a truly unique dish. Cooking peaches into a glaze turns them into an all-purpose marinade and mop sauce that can be painted onto barbecue foods as they cook.

Summer is quickly cooling into fall and soon peach season will be over. Try these recipes while the fruit is at its peak!
